Lassi
This Indian yogurt and fruit drink can be make with tofu and lemon juice so successfully that no one will know the difference. This makes a great snack or dessert anytime and many combinations are possible.
Ingredients
1 ⅓ cups chopped pineapple or 1 cup frozen pineapple concentrate
2 ⅔ cups cold water plus ¼ cup sweetener or 3 cups of your favorite fruit juice
1 cup crumbled firm silken tofu
1 ½ scoops GeniSoy Natural Protein Powder(6 tablespoons)
¼ cup lemon juice
12 ice cubes
Directions
Place all the ingredients, except the ice cubes, in a blender and process until smooth. Add as many of the ice cubes as your blender will hold and grind up with the mixture until frothy. Place any remaining ice cubes in serving glasses and pour over the blended mixture. Serve immediately.
