Cranberry Nut Bread
Ingredients
2 ¼ cups unbleached or half whole wheat flour
1 teaspoon non-aluminum baking powder
½ teaspoon baking soda
½ teaspoon salt
1 (12.3 ounces) package firm silken tofu
1 cup brown sugar
½ cup oil
2 teaspoons vanilla
2 scoops GeniSoy Natural Vanilla
Shake Powder (½ cup)
1 cup fresh cranberries
½ cup chopped walnuts
Directions
Preheat the oven to 350 degrees F.
Combine the flour, baking powder, baking soda, and salt in a bowl, and mix together.
With a mixer, beat together the tofu, brown sugar, oil, vanilla, and protein powder.
Add the flour mixture and beat in until blended
Add the cranberries and walnuts, and beat again briefly until blended.
Divide the batter evenly between 2 oiled loaf pans and bake for about 50 to 60 minutes.
Yield: 2 loaves (16 slices)
