Soybeans are made up of 30 percent carbohydrate, 18 percent oil, 14 percent moisture and 38 percent protein. They are the only legume that contains the full nine essential amino acids in the correct proportion for human health. Soy protein therefore is categorized as a high-quality, complete protein. Its nutrition benefits include being good sources of phosphorus, potassium, B vitamins, zinc, iron and the antioxidant vitamin E.  The Food and Drug Administration approved a health claim for foods that contain at least 6.25 grams of soy. The health claim states that, “25 grams of soy protein a day, as part of a diet low in saturated fat and cholesterol, may reduce the risk of heart disease.” Nutrition experts also agree that soy-based foods are good for you because they contain less saturated fat than meat does and also provide dietary fiber, high quality protein, minerals, iron, essential fatty acids, and other important nutrients.  Soy foods are a tasty way to lower your LDL (bad) cholesterol and increase your HDL (good) cholesterol.
